Made in…Nice | Stay YNA

It’s nearly Easter and chocolate is at the forefront of our mind at the STAY YNA Head office. Marjorie Maissa, our Nice Area Manager told us about a unique artisan chocolate maker in Nice that is really pushing the boundaries. Here’s Marjorie’s interview  (in her own French style) with the very talented creator/ designer Jean Patrice of Chocolate Degustation Paci in Avenue Notre Dame. Marjorie… Today was a lovely meeting with a local chocolate maker and creator(designer), JP PACI. 

Jean Patrice "played the game" happily and answered to our mini interview. I had also the chance to taste his nice chocolate that he can spend hours to create/produce/accomplish and keep creating new items depending on the request of his customers.

All his chocolates are 100% natural and made from 100% cocoa butter. I met him in his lovely little shop in the city centre of Nice on the Avenue Notre Dame where you can ask for anything you wish for him to make and personalised depending on your "envy”.

What inspires your creativity? 

I studied the "Beaux Art" (Fine Art) and my dad was a chocolate maker. All my creations are a mix of these two aspects, the Art on one side and the familial influence.

What is your most interesting customer request? 

There are two that come to mind...

A "doudou" which is the teddy bear of a little child. The parents asked me to represent the teddy bear of their little one. I had to create the mould to approach as much as possible to the real one and it was a cute thing to do and very satisfying to please this young customer.

I was also recently asked by a neurologist to create a skull. It was an open skull showing the brain....

What is your favourite chocolate to make?   

I like to do is trying to imitate as close as possible an object, (doing an ersatz) like the bag "haute couture" that I do, the "Louboutin" shoe or the Nicois specialities that I have created like the chocolate Raviolis and also the french cheeses. I like following the latest trends. Last year it was the mojito, so I made some nice mojito in chocolate then the "spritz" this year!

How would you spend you perfect day in Nice?

In the sun, somewhere in front of the sea, as we need the sea every day, with a cocktail in my hand, at the terrace of a nice Coffee shop and "letting my brain escape" (s'evader : which means almost dreaming awake and letting the thoughts goes).

If you were recommending a holiday to Nice what would be you top 2 things to do in Nice?

Walk with your head up anywhere in Nice and watch for the beautiful architecture. Don't follow the big "arteria"(streets) and discover the little streets and all the nicois cultural heritage.
